Cinnamon-Banana Cake with Chocolate cake for diabetics

When you’re on a diet, you might think that cake or ganache is not for you. On the contrary, there is always a way to turn your favorite sweets into healthy choices. This recipe below is for your healthy dietary program. A series of recipes from what is a diabetes diet


Ingredients



  • Ganache

  • Cake

  • 2cups all-purpose flour

  • 1/2cup packed brown sugar

  • 1 1/4teaspoons baking powder

  • 1teaspoon ground cinnamon

  • 1/2cup whole wheat pastry flour

  • 1/2cup granulated sugar

  • 3/4cup fat-free milk

  • 1/2cup refrigerated or frozen egg product, thawed, or 2 eggs, lightly beaten

  • 2/3cup mashed banana

  • 1/4cup canola oil

  • 1teaspoon vanilla

  • 3ounces of dark chocolate, chopped

  • 1/4cup fat-free half-and-half

  • 1/2teaspoon salt

  • 1/2teaspoon baking soda


Directions

  1. To prepare the cake of your perfect dessert for diabetes,preheat oven to 325 degrees Fahrenheit. Grease a 10-inch fluted tube pan with butter. Set the pan aside.

  2. In a large mixing bowl, combine flour, baking powder, cinnamon, granulated sugar and brown sugar, salt, and baking soda.

  3. In another medium bowl mix milk, eggs, oil, and vanilla. Then, add the mashed bananas; stir until completely mixed. Finally, add this mixture to flour mixture. If you have an electric mixer, beat it for 2 minutes. Otherwise, stir it until the mixture is fully homogenous. Spread this mixture evenly into a prepared pan.

  4. Bake the mixture for about 45 to 55 minutes. To make your dessert for diabetes perfect, you can try using a wooden toothpick. Insert it near the center of the cake and see if there is any mixture sticking to it. If not, then you baked your cake.

  5. Let your cake cool in the pan for 10 minutes. Later, remove cake from pan and place it on the wire rack.

  6. When you’re done with the cake of your great dessert for diabetes, start preparing your ganache. To start, mix chocolate and half-and-half milk in a small bowl that is microwave safe. Then, microwave the ganache mixture for 1 minute in medium power. Do not cover it when you microwave the mixture.

  7. Let it chill for 5 minutes. Stir until completely smooth.

  8. Spread the ganache evenly over the cooled cake.

PER SERVING: 197 calories, 177 mg of sodium, 34 grams of carbohydrate (2 grams of fiber, 17 grams of sugars), 5 grams of total fat (1 g sat. fat), 4 grams of protein, 1 mg cholesterol.

Normally, this dessert is of course very high in calories. So, to make it a dessert for diabetes, I have a great tip to decrease the calories and increase the taste!

Tip

Since this is a dessert for diabetes, you should prefer some substitutes to sugar. Instead of granulated sugar, choose ‘Splenda Sugar Blend for Baking’.  Also, instead of brown sugar, choose ‘Splenda Brown Sugar Blend for Baking’. Yet, don’t just mix the whole package; calculate the amount of these products equivalent to 1/2 cup granulated or brown sugar.
